The healthiest solution to leftover cooked Oatmeal.
If you’re like me and like to you have a healthy bowl of oat meal in the mornings, you might end up with some leftover oatmeal.
I add spices such as Cinnamon and Ginger as well as honey, chia seed, dried fruits and coconut oil to the mix and truly make it a wholesome breakfast that can sustain my mind and body till lunch time while providing additional medicinal properties by adding those spices.
There’s one issue though, I never measure the quantities and of course there’s always left over oatmeal in the pot. Apparently some of my friend and family are dealing with the same “sticky” issue especially if they’re making oatmeal for more than one person (you never want to make too little in case someone asks for seconds)
Well here is the most delicious solution you’ve been waiting for Mr. Shai Tertner…..Just make soft baked spiced oatmeal cookies!
Now since my oatmeal already has cinnamon, ginger powder, honey, almond milk, coconut oil, dried fruit etc., all I add is one egg, if the mixture is too soft add a little granola to bind it together, if is too dry add some more almond milk. Mix it all together to create a batter or “dough” if you will.
Heat the oven to 350 Fahrenheit.
By the way feel free to add anything else you like, mixed nuts, dried fruit, coconut flakes, raisins and some brown sugar if you like them a bit sweeter.
Make little balls with your hands and then flatten them on oiled baking sheet (I use coconut oil to grease the bottom of sheet )
Bake the cookie for about 40-50 minutes. Or until golden brown. ( CHECK on them from time to time )
Let them cool off. And you’re done.
Remember these cookie are soft , since the oat meal has been pre-cooked, give it time to bake and lose some of its water and let them cool off before you take them out of baking tray otherwise they will break.
You can use them the next day as oat meal “cookie-bars” instead of cooking another batch of fresh oat meal.
